چکیده مقاله
Camel milk is a staple food in most parts of the world, especially hot and dry regions. Camel milk is one of the beneficial nutrients for human health. These substances can help in the treatment of some important human diseases such as tuberculosis, asthma, digestive diseases. The composition of camel milk is different from cow's milk. The effect of feed, breed, age and stage of lactation is effective on the composition of camel milk.
Region and season significantly change the proportion of compounds in camel milk. Camel whey protein is not only composed of many soluble proteins, but also has proteases such as chymotrypsin A and cathepsin D.
Hydrolysis of camel milk proteins leads to the formation of bioactive peptides that have a special effect on the health of the main body systems and transfer physiological functions to these systems. Camel milk has antioxidant, antimicrobial, anti-diabetic and anti-cholesterol activity.
